Soba Noodle Salad with Pea Shoots and Oyster Mushrooms
Recipe developed for Bon Appétit’s Food For Your Well Being Program- Misunderstood Vegetables - Explore What You’ve Been Missing, for the month of May. This recipe calls for pea shoots, which are only available in the spring and, unfortunately, often go left uneaten. When I created this recipe for a friend, she brought over some eggs from her chicken, which when soft boiled, were a welcome and lovely addition to the original recipe.
