Zucchini Involtini
Ingredients
- Zucchini, medium slices length-wise
- Prosciutto
- Toasted pine nuts
- Chevre
- Olive Oil
- Herbs as desired
Directions
- Brush zucchini slices with olive oil and cook about 5-10 min on each side on 400 degrees or until soft.
- Mix goat cheese with pine nuts and herbs (may have to add a little olive oil to soften)
- Place slice of prosciutto on cooked zucchini to fit, add dollop of goat cheese mixture on one end and roll up.
- Repeat with other pieces.
- Serve at room temp.
